at what rpm would you say to change gears in a street race ???

you mean in a drag race!!!:P
depends if you have a ze or not
if its a ZE shift at 7000k
if its a k8 (normal v6) shift at 6500
if its a 4banger ... do an engine swap to a bpt swap:P
