I have a 93 RS without Airbags, but I bought a V6 from a car that had Airbags... I changed all the wiring and Dash for the V6 one... Will the fact that I have no airbags sensors will cause any problems with the V6 CPU???

And no I dont have access to the Donor car anymore...

CAn't say with certainty but my gut say no.

Airbags run through a seperate SDM (Sensor Diagnositic Module) which monitors the sensor accelerometer data and decides when to fire the airbag... Typically these are not part of the Engine Control Unit... The ECU was designed and built before Airbags were mandated so its unlikely they would have opted to re-design the ECU to accomodate the Airbag - especially if the Airbag was not standard equipment world wide.
