By default the screens show the same thing (Everything I say is referencing the M10K), but I think there is an option to make the other screen an extended desktop. My computer/tv are in different rooms right now, but I'll look into later tonight.
I'm hoping I don't run into problems using a PCI board, as I'll also need PCI for WiFi I'm assuming, tho I could go the PCMCIA route for that I suppose.
The wifi is pretty flexable as there are pci, usb, and external ethernet boxes and should be chosen last. My board came with a pci riser to take 2 cards, which should be enough to support more than you need.
Pretty much anything can be run through usb or 1394 nowdays, so anything added on shouldn't be a problem. Just make sure you have enough power.

most mini-itx systems will have a mini-pci slot, which is basically for wifi cards, so there sholdn't be a problem there.
