I think this week I will swap the original curved neck intake manifold onto the car and see what happens.

We finally figured out the problem, and it was fairly simple!
The gas tank is full of rust - I mean BAD! The previous owner let the car sit outside for 2 years without a gas cap, so the inside of the tank is all sludged up and it ruined the pump and clogged the filter. We drained the tank and dug out as much of the old crap as we could and washed it, and replaced the fuel pump/prefilter.
Also there was a vacuum leak where the EGR hookup is supposed to be on the intake manifold. Made some custom plugs for that and that solved the weird idle problem.
It's hard to say what was causing the bucking and stalling issues, but I think it was mostly the fuel pump.
